To edit, create, and delete Off-Seasons, you can go to Settings > List Items Visibility

From here you can edit the names, edit the start and end dates, and delete the Off-Seasons entirely

Editing an Off-Season will effect Visits using that Off-Season, so if you extend or shorten an Off-Season you might see your scheduled Recurring Visits that use that Off-Season change a bit.
